Camping in Style - Trash Hash

Trash hash . . . the name is not appealing but it has been a camping tradition for us for many years. 
 Trash hash had its humble beginnings as some leftover hot dogs, bacon, potatoes, onions, eggs, corn on the cob and cheese  . . . basically the foodstuffs left over from a weekend of camping that wasn’t worth trekking home with nor did we want to dump it.  Trash hash was born.

Now it is a planned event . . . the morning of the last day of camping is the customary Trash Hash breakfast.  I make sure I bring the basic ingredients and then whatever else may be leftover gets tossed in.

This recipe is army sized because I’m usually cooking for a group.  It’s huge.  It’s hearty.  It’s awesome. 


The base of the hash is always:

  • 1 Can Potatoes, drained
  • 1 Can Corn, canned / drained
  • 1 Dozen Eggs
  • 1Onion
  • 1 lb Bacon
  • 1 lb Breakfast Sausage
  • Cheese (American, cheddar, whatever)
  • Butter – if needed
Other stuff we’ve thrown in:

  • Kielbasa
  • Green Pepper
  • Hot Dogs
  • Hamburger
  • Beans
Everything should be cut up into cubes or small bite size pieces. 

In a large skillet, cook the meats until they are nice and browned.   Remove from pan and set aside. 

In the fat leftover from the meat brown the onions, peppers, etc.  Add the corn and cook until it starts to caramelize.  Add the potatoes and heat through.  Season with salt & pepper or whatever you like but traditional trash hash is seasoned with Tony Chaciere Cajun Spice.  Return the meat to the pan and mix everything up.  Stir in the eggs and cook until scrambled throughout.  Finally, add the cheese – however much you like – and serve.   

Don't worry if it looks like a big ol' mess . . . it's supposed to.  

Trash has must always be served with hot sauce.  It’s kind of a rule.
